Chorizo Chicken

Ingredients
Chicken Breast, no skin, 12 ounces Chorizo, pork and beef, 1 link (4" long) Mozzarella Cheese, part skim milk, 4 oz Pineapple, 4 slices (3-1/2" dia x 3/4" thick)
Directions
1) Flatten chicken and season (I used Black pepper only) place on grill over medium heat

2) Remove skin from sausage link chop up and saute chorizo in skillet until cooked through

3) When Chicken is almost done, place pineapple slices on hot grill surface for 1-2 minutes

4) place chicken in skillet, top each breast with equal amount of sauted chorizo, top cheese and cover until cheese is melted
