Mini Banana-Honey Muffins

1 1/2 cup white flour1 teaspoon baking powder1 teaspoon baking soda1/2 teaspoon salt1/2 cup walnuts halves, chopped3 large bananas, mashed1/2 cup honey1 egg, beaten1/3 cup skim milk1/4-1/2 teaspoon cinnamon1/2 teaspoon vanilla extract
Mix together flour, baking powder, baking soda, salt, cinnamon, and walnuts. In separate bowl, mash bananas. Add egg, honey, milk, and vanilla to bananas and mix together. Gently fold dry ingredients into wet ingredients. Do not overmix. Spray a mini-muffin pan with cooking spray, and fill each cup 3/4 full of batter. Bake at 350 degrees F. for 12 minutes. Yield: 53 mini-muffins. To make fat-free muffins, substitute 2 egg whites for the egg, and omit the walnuts. To make it even healthier, substitute whole wheat flour for some of the white flour.
