Coconut Brown Jasmine Rice Pudding

Ingredients
3/4 c. long grain brown jasmine rice2 (14oz.)cans lite coconut milk3 1/4 c. non-fat milk1/2 c. sugar1/4. tsp. salt
Directions
Combine all ingredients in a medium saucepan. Bring to a boil over medium-high heat. Reduce heat to low and simmer gently for 1 1/2 hours, stirring occasionally. Pour into a large bowl and refrigerate for an hour before serving.
