Ingredients
1 quantity pizza dough made by replacing water with Guinness in recipe (or pre-made dough).1 pkg. turkey bratwurst.1 c. sliced yellow onion1 Tbsp. olive oil1 c. sauerkraut, wrung free of liquid1.5 c. shredded, reduced-fat swiss cheese
Directions
Mix pizza dough together, replacing Guinness as the liquid in recipe (you will likely use no more than 8-10 oz. of the 16, but save the remaining!). Need by hand 10 min., or until smooth and elastic. Place in an oiled bowl and cover to let rise 1 hour. Punch down dough and let rise an additional hour. After second rising, roll out dough to an approximately 10" circle and place on pizza pan/ stone. In a medium pan, saute onions in olive oil until translucent. Add remaining beer and bratwursts and braise until thoroughly cooked. Strain off liquid and reserve onions. Slice bratwursts in circles. Build pizza by adding onions on top of dough, then sauerkraut, bratwursts, and finally the shredded swiss. Bake in preheated 350 degree oven for 30 min. Makes 8, one slice servings.

I want to try polish sausage next time - perhaps turkey sausage. No sweetness. - 11/13/08
