pumpkin oatmeal cookies

Ingredients
1 C. flour1 tsp. cinnamon1/4 tsp. salt1/4 tsp. baking soda1 1/2 C. packed brown sugar1/2 C (1 stick) butter, softened1 egg1 tsp. vanilla1/2 C solid-pack pumpkin2 C. uncooked old-fashioned oats1 C. dried cranberries (optional)
Directions
1. Preheat oven to 350. Line cookie sheet with parchment paper.
2. Sift flour, cinnamon, salt, and baking soda in a medium bowl. Beat sugar, and butter in large bowl with electric mixer at medium speed about 5 min or until light and fluffy. Beat in egg and vanilla. Add pumpkin, beat at low speed until blended. Beat in flour mixture just until blended. Add oats, mix well. Stir in cranberries.
3.Drop batter by heaping tablespoons about 2 inches apart onto prepared cookie sheets. Bake 12 minutes or ntil golden brown. Cool on cookie sheet 1 minute . Remove to wire racks, cool completely.
Makes about 2 dozen cookies
