Halibut Enchiladas

Ingredients
4 C halibut (Approximately 1 ½ pounds)1 C Mayonnaise1 C Sour Cream 8 oz Philadelphia Cream Cheese softened ½ C green chilies4 tsp cumin1 tsp cilantro (optional)1 small finely chopped onion 1 C olives sliced1 C whipping cream1 cup mild salsa Shredded Mozzarella Cheese 16 ozGrated Parmesan Cheese to taste1 large package 8 inch corn tortillas
Directions
Cut halibut in 1” cubes, cook in boiling salt water for approximately 4 minutes. Drain and salt and pepper to taste. Mix mayonnaise, sour cream, Philadelphia Cream Cheese, green chilies, cumin, cilantro, and onion. Add halibut pieces. Fill corn tortillas, roll and place in 13 X 9 pan, and 8 X 8 pan. Pour whipping cream and mild salsa over the top of both pans. Cover with cheeses, to taste. Bake at 350 degrees for 30 minutes, Do Not over cook.
