White Rice, medium grain, 4 cupsStove Top Stuffing Mix, 1 cupRed Ripe Tomatoes, 1 medium whole (2-3/5" dia) Green Peppers (bell peppers), 1/2 cup, choppedTomato Paste, 1 sm canWater, 1 cup (fill small can 3 times)Chicken Breast, no skin, 6 unit
Pre heat oven to 385. Take White Rice, and mix with Stove Top Stuffing Mix cook rice as usual approx 20 minuets.
When rice is done cooking with the stove top stuffing mix place in baking dish rice will make approx. 6-8 cups cooked.
Chop or dice Red Ripe Tomatoes and Green Peppers (bell peppers) place on top of rice. Take the Tomato Paste, 1 small can and empty it in to a small bowl add 3 cans of water to the paste and set aside. take Chicken Breasts and lay them on top of the rice and peppers and tomatoes. Next pour the tomato mixture over the chicken. Cover and cook approx 45min. - to an hour when ever the meat is no longer pink inside.
