Ingredients
1 cup rice flour2 cups (grated carrots, bell peppers & peas)1-2 hot green chili, chopped2 tbsp chopped cilantrosalt to taste1/4 tsp cumin seeds2 tsp canola oil
Directions
Mix all ingredients together with enough water to make a pliable dough. Let it rest for 15 min. Divide dough into 5 balls.

On a wax paper add a few drops of oil, spread the dough ball into a think pancake with your hand. Put a flat griddle on medium heat, spray with PAM, transfer the roti from the wax paper to the pan. Put a few drops of oil around the edges of the roti. Cover & cook until light brown on one side, flip and cook on the other side.

Repeat with the other dough balls. Makes 5 rotis.
