Vegetarian Gravy

Ingredients
olive oilflournutritional yeastvegetable broththymepepperrosemaryred wine vinegartamari (soy sauce)balsamic vinegar
Directions
I did not include amounts for the ingredients, because it all depends on how much gravy you are making, and how the consistency is. Also... disregard the nutrition information as that is also going to depend on the specific ingredients you use, and the amounts.

Pour olive oil into a large frying pan over medium heat (usually about 3Tbs). Add a small amount of flour and stir it with a wisk until smooth. Keep adding flour slowly, constantly wisking until smooth. Once it develops a paste like consistency, add a small amount of vegetable broth, again stirring until smooth. Keep adding broth and nutritional yeast/flour until the consistency is correct and you have the quanitity you desire. Always stirring to keep it smooth, and adding small amounts at a time.
Once you have the correct consistency/quantity - add a very small amount of balsamic, and red wine vinegars - a teaspoon or so - and maybe two teaspoons of the tamari, and the thyme, rosemary, and pepper to taste. Voila! You have some awesome vegetarian gravy.
