Turkey Confetti Fajitas

Ingredients
# Turkey (light meat), 1 cup, in small pieces# Green Peppers (bell peppers), 1 cup, strips # Mushrooms, fresh, 1 cup, pieces or slices (remove)# Zucchini, 1 cup, sliced # Salsa, 1 cup # *Mission whole wheat tortillas, 4 serving # Olive Oil, 2 tbsp
Directions
Cut veggies in your desired size, I stripped my peppers and diced the rest.

Cut turkey into manageable pieces.

Place olive oil into skillet or fry pan and high heat.

Add veggies turn a few times to coat. Veggies should stay al dente and retain color, this is a stir fry method.

Add turkey long enough to warm through.

Add salsa and mix to coat.

Add mix to tortilla. These are meant to be large, might need a fork :)
