Garlic-Chili Roasted Chayotes

Non-stick cooking spray1 1/2 tbsp chili powder1/2 tbsp garlic powder1/2 tbsp kosher salt4 chayote squash (about 28 oz total)
Preheat oven to 450F, mist a cookie sheet with non-stick spray.
Combine chili powder, garlic powder and salt in a small dish, set aside.
Peel and halve chayotes lengthwise, removing seeds.
Cut into wedges and sprinkle evenly with the spice mixture.
Place wedges on sheet pan, mist lightly with nonstick spray.
Roast 20 minutes, flip wedges and roast a further 10-15 minutes, until golden brown and tender.
Serve immediately.
