Roasted Cherry Tomato Sauce

Ingredients
2 pints cherry tomatoes1 onion, quartered1 green pepper, sliced6 cloves of garlic, peeled2 tbsp olive oilsalt & pepper (opt)crushed red pepper flakes (opt)
Directions
Mix all ingredients together with some salt and pepper, and spread out on a baking sheet. Roast at 400 until the tomatoes pop (about 20 mins). Add all ingredients into a food processor and pulse until pureed.
Freezes well.
Makes about 3 cups.

    I added Italian Seasonings, cut the oil to 1 Tbsp. And added 1 Tbsp. Balsamic Vinegar and after cooking pressed the tomatoes to get them to burst. Great over Chicken or Fish as a sauce. - 7/13/14
