Humitas (chilean tamales)

1.- Cut the corn ears in the lower part where the grains start with a knife, giving special attention to get the pluck the leaves with ease and without damage them.
2.- Peel the corns taking off the hairs (you can reserve them for infusion, makes a great mild diuretic, is excellent for period time).
3.- Select the big clean leaves in pairs of two and set them apart.
4.- Chop the corn grains and pass them for the machine for mince meat with the basil, if you dont own one of these machines you can grate it.
5.- Reserve your processed corn in a pot. Peal the onions and chop them very finely.
6.-Fry the onion in a pan with just enough oil for coat it. Once fried add to the mixture of corn together with the milk.
7.- Spice with salt and oil to taste.
8.- Fill the reserved leaves of corn with the mixture forming a pocket or papillette (papillon), finally tie them with stripes of smaller leaves.
9.- Put the neatly "packaged" humitas to boil in a pan with plenty of boiling salted water for 45 minutes aprox.
10.- When you open them you can sprinkle them with sugar if you want, or even use some chile on them, enjoy the fruits of your hard work ^^
