Vegetable Ragout

Ingredients
2 stalks fresh broccoli8 fresh brussel sprouts4 cremini (baby bella) mushrooms3 oz. Trader Joe's roasted red pepper & artichoke tampenade (or stewed tomatoes seasoned to taste)2 oz. part skim milk mozzarella cheese
Directions
Boil or steam broccoli & brussel sprouts. Drain as needed. Coat with tampenade & add mushrooms (sliced) & cheese (shredded or cut in small pieces). Heat on very low heat just enough to melt cheese & heat mushrooms. Makes one large entree or could be used as a side dish or pasta/rice topper for up to 4 people.
