Mexi-Mexi Mix

Ingredients
2 whole eggs2 egg whites1/3 cup of sour cream1 cup of brown rice1 cup of salsa1 tablespoon of pepper1 teaspoon chili pepper
Directions
Boil a cup of water.
Add brown rice and cover; you need to let this simmer for an extra two minutes. Unlike White rice it needs extra time to get tender
Scramble the eggs in a frying pan, add pepper and chili pepper
When rice is done, add rice and sour cream mix together.
Add salsa than eggs on top
Mix and enjoy!
