South Beach Macaroni & Cheese

Ingredients
16 oz whole wheat elbow pasta2 tbsp Smart Balance Light2 tbsp whole wheat flour1 1/4 cup heavy whipping cream1 cup water2 cups fat free shredded cheddar cheese1/4 tsp salt1/8 tsp black pepper
Directions
Preheat oven to 400F
Bring saucepan of water to a boil and cook pasta according to package directions. Drain and rinse under cold water for 30 seconds.
While pasta is cooking, melt Smart Balance in a skillet over medium heat. Add flour and whisk continuously until flour is incorporated and cooked, about 2 minutes.
Add cream and water, bring to a simmer and cook, whisking frequently until blended and thickened, 3-5 minutes.
Add cheese, salt and pepper; stir until blended. Add pasta and stir until coate and warmed, 1 minute. Transfer to a cassarole dish and bake for 10 minutes. Serve hot.
