Ingredients
2 14-oz cans stewed tomatoes2 1/2 lb chicken boneless, skinless chicken thighs (about 15)1 tbsp. dehydrated onion2/3 cup Uncle Ben's Natural Select Rice, Chicken and Herb Flavour
Directions
Cut chicken into pieces and simmer all on top of stove for 20 mins to half an hour. Makes 8 1-cup servings.

    I removed skin from chicken and seasoned with salt, pepper, and thyme. Seared in vegetable oil until brown on both sides. Removed from heat. Added 1 TB of butter then mushrooms, onions, and black olives. When they were ready I added chicken back to dutch oven and cooked with lid ajar for 30 minute. - 5/6/14
