Ingredients
Whole Tomatoes -1 large canEnchilada Sauce - 1 14 ounce canChicken Broth - 14 ounce canChicken shredded - 1 pound cookedCumin - 1 tspCoriander - 1 tablesppon chopped Chili Powder - 1 tspsalt - 1 tsppepper - 1/4 tsponion - 1 Medium choppedFrozen sweet corn - 1 small bagWater - 2 cups
Directions
Mix it all in the crock pot.. let it simmer for 6 - 8 hours. Top with shredded Monterey Jack cheese and tortilla strips (NOT INCLUDED in recipe calculation)

    This recipe was so good! I've made this recipe several times! To add a little more vitamins and stretch it out some, I added some diced carrots, squash, and zuccini. Very hearty and tasty! My two year old son (who is such a picky eater!) just ate it up and even asked for more! That's a first! - 12/6/08
