Turkey Cutlets w/Balsamic Brown Sugar Sauce

Ingredients
1/4 cup flour1 teaspoon salt1 teaspoon dried thyme1/2 teaspoon black pepper4 - 4oz turkey breast cutlets1 tbls olive oil1/4 cup minced shallots2/3 cup dry red wine2/3 cup low-sodium, chicken broth1/4 c balsamic vinegar2 tbls brown sugar
Directions
Mix together the first four ingredients in a shallow dish; stir well. Dredge cutlets in flour mixture. Heat oil add cutlets cook on each side 3 minutes or until done. Place on a platter and keep warm.
Add shallots to skillet, and saute over medium heat 1 minute. Add wine and broth; stir scraping bottom of skillet with a wooden spoon to loosen the brown bits on the bottom of skillet. Bring to a boil and cook for 5 minutes. Add vinegar and sugar, return to boil. Reduce heat and simmer for 3 minutes. Spoon sauce over turkey.

Serving size 1 - 4 oz turkey cutlet and 2 tbls sauce
