Spanish Rice

Ingredients
16 oz ground beef, browned1 onion, chopped1 green bell pepper, chopped1 red bell pepper, chopped1/2C mushroom, chopped1 tsp cumin1 tsp coriander1 clove garlic1 6oz can tomato paste2C rice5C water
Directions
Brown ground beef in a skillet pan. Drain. Add onions, peppers and mushroom and fry until onions are translucent. Add remaining ingredients, stir well and bring to a boil. Reduce heat to low, simmer covered for 45 minutes or until rice is cooked. If rice starts to dry out before becoming done, add more water in 1/2C increments.
