Bran/Soy Muffins

Ingredients
3 cups Unprocessed Wheat Bran1 cup boiling water1 cup Splenda1/2 cup light butter2 1/2 cups Soy Flour2 tsp. baking soda2 eggs, beaten2 cups soymilk
Directions
Preheat oven to 400 degrees. Mix 1 cup bran with 1 cup boiling water; stir and let water absorb. In a seperate bowl combine splenda and butter. In a seperate bowl combine flour and baking soda. COmbine everything with remaining ingredients in a large bowl and mix well. Drop mix into muffin cups and bake for 15 minutes.

Makes 2 dozen muffins. Serving size: 1 muffin
