Curry Turkey Salad

Ingredients
4 Tbsp Tofu (or 3 oz)1 Tbsp lime juice1 Tbsp honey1 tsp curry powder1/4 tsp salt1/4 tsp black pepper2 cups chopped cookied chicken or turkey 1-2 cups grapes, halved3 dashes celery salt (or 1/2 cup diced celery)1/4 cup red onion, chopped2 Tbsp cashew peices, optional
Directions
Combine first 7 ingredients in a large bowl. Add chicken or turkey, grapes, celery, onion, and cashews, stir gently to combine.

Makes about 4 -1 cup servings.

This can be served on pita bread. And is delicious with your left over cranberry sauce.
