MF-friendly Chipotle Chicken Soup

Ingredients
1 lb fresh chicken breast1 7 oz can of chipotle peppers in adobo sauce1 14.5 oz can of diced tomatoes2 cloves garlic quartered or garlic powder2 cups chicken broth1 cup sliced mushrooms (optional)1 cup chopped scallions
Directions
Puree chipotle peppers and adobo sauce in food processor.
Put all ingredients into slow cooker on low for about 8 hrs or on high for 4-6.
Remove garlic clove quarters.
Break up chicken pieces.
Makes 4-6 servings depending on your preferred serving size (this recipe is based on 4 larger bowls).
