Approx 20 dried apricots, cut into 8 pieces1/4 cup cider vinegar1/4 cup water1/4 cup honey3 star anise1 tsp pepper2 tsp ground ginger1/4 tsp crushed red pepper1/2 onion, diced
Add all ingredients except apricots, bring to a boil over medium heat, then simmer approx 5 minutes
Add apricots and cook until "jammy"
