Cheesy Broccoli Casserole

Ingredients
2 packages frozen chopped broccoli (10oz each)1 C chopped celery1 can cream of mushroom soup1 C nonfat sour cream1 jar sliced pimento5oz grated (yellow) cheddar cheesesalt and pepper to taste
Directions
Follow package instructions to cook frozen broccoli. Drain well. Cook celery (put in microwave safe dish w/ 1/4 C water and cook for 2 min on high) and drain. Drain and rinse pimentos.

Put all ingredients except cheese in a glass casserole dish. Mix well. Season with salt and pepper to taste. Top with shredded cheddar cheese.

At this point, you can refrigerate until you are ready to cook.

Cook at 350 degrees for 30 minutes. Makes 12 1/2 cup servings (warning -- good luck getting each person to eat only 1/2 cup of this...it WILL be popular!)

Please note that you can add more cheese or take some away, depending on your dietary needs. Feel free to use reduced fat/sodium varieties of condensed soup as well.

    A nice way to "dress up" broccoli. I'd say this serves 8.
    Next time I'll serve it over rice---there's lots of sauce. (Note to self---if cutting broccoli in 1/2 cut ALL other ingredients in 1/2 too). - 1/24/09

    I recommend you add another package of broccoli if its too saucy for you. I've done that before, although this is the original recipe. It's possible that I remember that version serving 12, and this one is only large enough for 8. I'll have to see the next time I make it.
