Mashed Sweet Potatoes with Ginger & Lite Sour Cream

Ingredients
4 Sweet Potatoes 5"long4 Tb. Lite Sour Cream 4 Tb. Smart Balance Buttery Spread1/4 teas. ground ginger1/4 teas. salt
Directions
Cut up Sweet Potatoes into 2'" chunks. Place in vegetable steamer or microwave and cook until tender.
Drain water and place potatoes in a bowl.
Mash with skins on. Add Smart Balance , lite sour cream and salt. Mix well. Enjoy.
