Chicken Rice Skillet

Ingredients
Olive oil 2 tbs.lite soy sauce, 2 tbs.1 chop. onion1 tb. minced garlic6 chicken thighs, skinned.75 tsp ground ginger.25 tsp black pepper1 c. chicken broth2.5 c. water1 c. rice
Directions
In large pot, stir together oil, soy, onion & garlic. Lightly brown. Add chicken & cook 10 mins. each side. Season with ginger & pepper. Pour water around chicken. Add broth. Cover and simmer 20 mins. or until rice & chicken are tender.

    Made it last night for myself and my kids! It was a hit! I used the chicken that I had in the fridge which were thigh/leg parts so that upped all the calories/fat etc. but it was delicious and I have left over chicken and rice too! The recipe didn't say to add the rice when you add the water, I did. - 8/13/09
