Wegmans Roasted Cauliflower & Delicata Squash

1 head cauliflower, cored1 small red onion, peeled 1 1/2-inch dice1 pkge (20oz) cleaned and cut delicata squash1/4 cup wegmans basting oil1/2 pkg baby spinachSalt and Fresh black pepper to taste
1. Cut cauliflower and suash into the same size pieces for even cooking.
2. Toss cauliflower, onion and squash with basting oil, arrange on a single layer on backing sheet. Roast on center rack 30 minutes or until tender.
3. Add spinach to large bowl, add hot cauliflower-squash mixture. Toss to wilt spinach. Season to taste with salt and pepper.

Wegmans is one of my favorite places, Better food then restaurants. Don't live near one now. I do this without the oil, roast or a spray or two of olive oil. I add thyme & mint. Pretty and can add to it for a vegetarian dish, maybe pistachio's or black beans added too at end. Love this. Thank you - 9/6/18
