Crock pot vegetarian chile

Ingredients
2 tbsp olive oil2 large onions, chopped3 gloves garlic1 red bell pepper1 green bell pepper3 cans diced tomatoes2 tsp cumin1 tbsp chile powder1/2 tsp red pepper flakes10 pkg frozen corn2 15-oz cans black beans1 cup taco sauce
Directions
In skillet, cook onions, garlic and spices in the olive oil until onion is translucent.

Put all ingredients together in crock pot and cook on low for 8 hours.

    This was the best chile I have ever tasted. I added tofu crumbles and it was just as good as beef. I also prefer a more liquid chile, so I added a large can of V8 juice and skipped the corn. I can't wait to make it again. - 9/19/09
