Spinach & Spagetti Squash Casserole

Ingredients
2 tbsp Olive Oil1/2 Cup raw onions1 Cup Cottage cheese2 Cups Frozed Spinach3 Cups Spagetti Squash1/4 Cup Parmesan Cheese Grated2 Tbsp Garlic Powder1 tsp salt2 tsp parsley dried
Directions
Cook Large Spagetti squash in microwave 10 - 15 minutes. Scrape out when cooked into a casserol dish, add 2 cups of frozen spinach and 1 cup of 1% cottage cheese. Add spices and mix all together.

Saute onions with Olive oil until transparent and add to spinach mixtue. Sprinkle parmasen cheese on top and bake at 300 degrees for 30 - 40 minutes, (or until excess fluid has evaporated). Makes 6 good size servings.
