1/2 Cup uncooked instant brown rice1 teaspoon canola oit3 oz smoked turkey sausage(lowest sodium and fat available) quartered lengthwise and cut into 1/4" pieces1/2 medium red bell pepper finely chopped1/2 cup water1/2 teaspoon salt1 clove garlic chopped3 green onions chopped
Prepare rice using package directions, omit salt and butter.
In a medium skillet, heat oil swirling to coat bottom of skillet. Cook sausage for 3 minutes stirring frequently, Stir in garlic,onion, jalapeno and bell pepper. Cook for 1 minute. Stir in the peas water and salt. Cook for 2 minutes or until mixture is thickened slightly but some liquid remains. Remove form heat. Cover let stand 5 minutes then stir in rice. Makes 4 servings 1 cup each
