Thai cucumber salad

Ingredients
3 medium cucumbers 4 TBS cilantro1/2 cup of rice wine venegar1/2 cup of sugar2 jalapeno peppers1 TBSP salt1/2 cup of peanuts.....(if desired - nutritional value doesn't include peanuts)
Directions
Cut cucumbers in half and seed them. sprinkle them with the TBSP of salt and let sit for 15 minutes. Rinse and cut cucumbers into pieces. Chop peppers and cilantro. In a seperate bowl, mix vinegar and sugar, then pour over the vegetables.
makes 6 - 1 cup servings.
