Corn Fritters

Ingredients
1/2 Cup Whole Wheat Flour3/4 Cup Sweet Corn Kernels1/2 Cup Skim Milk1 EggSalt and Pepper to taste1/2 tbsp Canola oil
Directions
Combine corn, flour, milk, egg, salt and pepper.

Brush frying pan with a tiny bit of oil, just enough to make the pan glimmer. Drop a teaspoon of batter spaced out a few inches, I usually do three fritters at a time.

When the edges of the fritter look done flip and continue to cook. When done remove from pan and place on a papertowel covered plate.

Microwave the fritters for 1 minute on high to make sure it is completely cooked and to draw some oil out.
