Coconut Rice

Ingredients
1.5 cups coconut milk1.5 cups water2 cups white minute rice
Directions
Combine water and rice in a saucepan, bring to a boil. Add minute rice, reduce heat to low and cover. Let the rice sit for 10-20 minutes. It's ready to serve when all the liquid has been absorbed. Hint: I stick a fork or spatula into the middle of the pan and pull back just slightly so I can see down to the bottom. If the bottom no longer has any standing liquid, it's done! :)
