Farfalle Pasta and Broccoli

Ingredients
8 oz Farfalle Pasta1-1/2 cup Broccoli1/2 cup Parmesan Cheese1 Tbsp dried Parsley1/2 Tbsp dried Basil1/2 Tsp Red Pepper Flake2 Garlic cloves (minced)2 Boneless skinless Chicken breasts
Directions
1. Cut chicken into 1/2 inch cubes
2. Saute chicken in 2 Tbsp olive oil with minced garlic
3. At same time, cook pasta for 5 minutes.
4. Add broccoli to pasta water, cook additional 4 minutes.
5. Drain pasta and broccoli, reserve 1/2 to 1 cup of pasta water if desired.
6. Add pasta and broccoli to chicken and garlic. 7. Add parsley, basil and red pepper flake.
8. Cook addition 2 minutes.
9. Add pasta water if desired.
10. Add parmesan cheese and stir to coat pasta.
Makes four servings.

    I make something very similar to this, but somehow less healthy... think I might try it this way. :) - 12/1/11
