Pumpkin Custard

2 eggs2 cups cooked pumpkin1 cup unpacked brown sugar1/2 tsp salt2 1/2 tsp cinnamon1 tsp ginger1/2 tsp cloves1/2 tsp nutmeg10 fluid oz. undiluted low fat evaporated milk
Preheat oven to 425.
Beat eggs lightly in a large mixing bowl. Stir in remaining ingredients in given order. Pour into 7 custard dishes (which have been sprayed with cooking spray).
Bake at 425 for 15 minutes, reduce heat to 350 and bake for an additional 35 minutes or until knife inserted in center comes out clean. Cool on wire rack.
Makes 7 servings.
