candied yams - my way

Ingredients
16 yamsabout 1 cup brown sugar(you could substitute maple syrup)Apple juice - i used about 3 cups1 bag of sweet and spicy pecans & most of 1 bag (5oz) candied pecans both from trader joes.
Directions
peel and cube yams. Place in your baking dish. Fill to about 1/2 with apple juice. Bake in moderate oven (350-375) until fork tender. For me that was about 90 minutes. We cooled them off and then traveled. You could coarsely chop the nuts, add and roast for another 10 minutes.
When we got to our destination - we warmed them up in the oven uncovered for about 20 minutes with the nuts.
They were delicious!
