Garlicky Mashed Potatoes w Secret Veggie

3 lbs red potatoes3-4 cloves garlic, peeled1 cup frozen cauliflower pieces1 stick unsalted butter1 cup soy milk1 teaspoon garlic salt
Boil 2 quarts of water. Scrub and quarter the potatoes. Add potatoes, garlic cloves and frozen cauliflower to the boiling water. Boil over medium heat and check potatoes after 10 minutes for doneness. When fork pierces potatoes easily, drain and add everything back to pot. Mash all together (including garlic) with potato masher over low heat. Add butter and continue mashing. When butter is melted, add half a cup of soy milk and combine well. Add more as needed for desired consistency. Add salt or garlic salt to taste.
