Bren's Favorite Tortilla Soup

1 med Onion1 large tomato1 tsp olive oil1 clove garlic minced1 15 oz can hominy drained1 15 oz can black beans drained and rinsed1 15 oz chickpeas drained2 c frozen corn kernels2 cans fat free chicken broth6 lime wedges1/3 c shredded cheddar cheesetortilla chips
Puree onion and tomato in blender or processor till smooth.
In soup pot over med heat sautee garlic in oil.
Add the pureed onion and tomato; stir constantly for approx 2-3 mins so flavors can blend.
Add broth, beans, chickpeas, hominy and corn. Simmer 15 mins.
To serve:
garnish with juice of 1 wedge of lime, a sprinkle of shredded cheese, 3-4 tortilla chips crumbled, and some cilantro leaves.
