Buffalo Burgers with Greek Cheese

BURGER1 pound extra lean, ground buffalo 1/2 teaspoon Seasoned Pepper Blend1 teasppon Greek Seasoning1 teaspoon ground mustard powder2 egg whites1/2 teaspoon garlic salt2 teaspoon Worcestershire sauce1/4 cup bread crumbs2 tablespoon minced shallots4 leaf of red-leaf, green, or romaine lettuce4 slices of tomato4 whole-grain hamburger bunsGREEK CHEESE SPREAD2 oz. reduced-fat cream cheese2 oz. reduced-fat Feta cheese2 tablespoons fresh or dried chives
1) In a mixing bowl, combine egg, pepper, greek sasoning, mustard powder, egg whites, garlic salt, worcestershire sauce, bread crumbs and shallots. Add ground buffalo; blend well. Shape mixture into 4 equal patties. Grill over low to medium heat to desired doneness. Be careful not to overcook, as buffalo is very lean meat, and cooks more quickly than beef. (Approximately 5-6 minutes on each side at medium tempearture.) While burgers are cooking, prepare cheese spread.
2) In a small bowl, blend ingredients well. If a thinner consistency is desired, add a little Greek Vinaigrette, Ranch Dressing, or milk. Spread cheese over cooked burgers.
3) Top burger with some lettuce and tomato. Enjoy!
