Ingredients
tilapia filets, yellow onion, green pepper, plum tomatoes garlic cloves fresh lemon and lime juice, olive oil, brown rice, black beans, cilantro.avocado.
Directions
1 tilapia filet per person. Thaw and marinate in lime juice, garlic, cumin, salt and pepper. If trying to reduce sodium use Lemon Pepper Seasoning instead of salt. Chop large yellow onion, green pepper, 2 cloves or garlic and 4 plum tomatoes. Dice all vegetables equally so they cook equally. Saute onions and peppers in 1 TBS olive oil until tender, add garlic and tomatoes, season with same spices as used on tilapia. When all vegetables are cooked add fresh lime juice from one lime. Then add tilapia filets and cook on each side for about 2 minutes until tender. Serve with Brown rice and Black Beans. Garnish with fresh cilantro and lemon/lime wedges. Serve with vegetables and avocado.
