Introduction

Paella is a typical Spanish dish, originaly it is with chicken and rabbit , but you can use any ingredient. Here I made one with what I had in the fridge but cooking instuctions are the same for all and also I used cauliflower subst. rice. Spices are standard : tumeric, rosemary, thyme, paprika, zafron ...salt papper.

Number of Servings: 4

Ingredients

    400 gr cauliflower
    200 gr shrimps
    1 medium tomato grated
    1 cup chopped onion
    1 tbs crushed garlic
    200 gr green beans chopped
    150 gr mushrooms chopped
    4 tbs extra virgen olive oil
    2 cups water or stock (depending on the paella use fish, chicken or veg stock)
    salt, pepper,paprika, tumeric , rosemary, thyme and zafron or use any other combination of choice.

    Serves 4

Directions

1- steam cauliflowers to semi cooked let it cool and using a grater make rice and set a side.

2- fry garlic and onions in olive oil for 5 min, then add the rest of vegetables except tomato, and saute for 10-15 min.

3- Grate the tomato add it to the rest, cook for another 5 min.

4- Add 1cup of water or stock , cook until most of the it reduced.

5- Add salt pepper and spices of choice.

6- Add cauliflower rice and shrimps saute a bit 2-5 min.

7- Add another cup of water or stock and let it cook a bit till half the liquid is gone.

8- Put in the oven 170 ºC for 10-15 min and another 5 min with the broiler on till all the liquid is absorbed . Enjoy

PS: If you use chicken or meat you have to brown them first then add the vegs..

    you can't have green beans on the paleo diet, they are a legume. However good base for a recipe! - 3/27/11
