Number of Servings: 6

Ingredients

    2 Tbsp. good quality olive oil
    1 large slice of bread
    1 lb 10 oz (750 g) fresh spinach leaves
    7.5 oz (240 g) can of garbanzo beans, drained and rinsed
    2 cloves garlic, peeled and minced
    salt and freshly ground black pepper
    1 tsp ground cumin
    1 tsp paprika
    2 Tbsp water
    1 Tbsp wine vinegar

Directions

Heat 1 Tbsp of the oil in a large skillet and fry the bread until golden. Remove and reserve.

Rinse the spinach thoroughly and shake off most of the water. In a large saucepan, heat the spinach until it wilts, tossing or stirring it repeatedly. Drain thoroughly, squeezing out the excess water with a wooden spoon, and coarsely chop the spinach.

Add the rest of the oil to the skillet, then the spinach and warm through before stirring in the garbanzo beans and garlic. Season well and add the cumin and paprika. Finely crumble the fried bread and stir into the mixture. Add the water and vinegar, stir, and simmer gently for a couple of minutes.

Serve in ramekins.
Serves six.

    i love chickpeas and spinach and garlic, I loved this recipe, I did leave out the wine vinegar as I am not a big fan, but it turned out great. - 6/23/10
