turkey trot tacos--walking tacos

Ingredients
20 ounces of lean ground turkey1 small chopped onion1-2 cans (15 oz.) dark red kidney beans, drained and rinsed.1 package of reduced sodium taco seasoning mix1/2 c. waterlight or baked tortilla chipsreduced fat sour creamshredded lettucesalsa
Directions
In a large skillet brown the ground turkey and chopped onion. Drain if needed.
add the kidney beans, seasoning, and water.
Reduce heat and simmer till liquid is reduced.

Create your walking taco by layering the tortilla chips, taco mix, and then cheese, sour cream, salsa, and lettuce to your liking.

We make them in large disposable cups, bowls, and if you can find the baked chips in individual packages you can make them right in the wrappers.

This recipe will make at least 6-8 servings.
