Potato and Kale soup

5 Slices Turkey Bacon5 Medium Potatoes, peeled and cubed1 Medium Onion, coarsely chopped4 Cloves of Garlic ( I use the jarred kind)4 c chicken Broth3 C. Milk2 1/2 Tbsp Unsalted Butter2 C. chopped Kale2 Tsp Herbes de ProvenceSalt and Pepper to taste
In a large soup pan, cook potatoes in chicken broth until soft. Steam the kale over this for 8 or so minutes.
While this is cooking, cook bacon until crispy in a large sauce pan. I added a little olive oil because the bacon doesn't produce much fat.
Remove bacon and melt butter in the same pan. Saute onions and garlic until golden. Add the milk and seasonings and bring this to a slow boil. Turn heat down to low and stir occasionally.
Once the potatoes are soft, combine the milk mixture into the pot and add kale.
Makes about 4 servings
