1 cup egg whitesnon-stick olive oil spray1/2 tsp black pepper16 oz fresh spinach1 1/2 cups of diced cauliflower1/2 cup diced mushrooms8 oz non-fat cottage cheese8 oz Greek yogurt1/2 cup reduced-fat cheddar cheese
1. preheat oven to 350 degrees
2. Spray with non-stick sray
3. Saute onions, cauliflowerand mushrooms.
add to egg whites and cottage cheese and yogurt and cheddar cheese.
4. Stir until combined.
5. Bake in oven for about 45 minutes or until slighly bubblying. cool for 10 minutes before serving.

I am not a cook but I am a proof-reader and this recipe was not proofed before posted. I have all the ingredients but unsure as how to proceed. Do I mix the eggs up before I add other stuff to them? I read elsewhere to add 1/2 c. onion and microwave spinach 4 min. but nowhere tells when to add. - 11/18/12
