Turkey-Avocado Cobb Salad

Ingredients
1 lb turkey breast cutlets1 tbsp olive oil1/4 tsp salt2 tbsp cider vinegar1 tsp Dijon mustard8 cups spinach leaves4 slices cooked bacon, crumbled1/2 ripe avocado, cut into 1/2" cubes4 cherry tomatoes, halved1 oz blue cheese, crumbled
Directions
Brush turkey with 1 tsp olive oil and half of the salt. Grill turkey. Cut into chunks.

Combine vinegar, mustard, 1 tbsp water, remaining olive oil and salt.

In a large bowl, toss spinach with 2 tbsps of the dressing. Arrange turkey, bacon, avocado, tomatoes and cheese over spinach. Drizzle remaining dressing over salad and season with black pepper.

    I poached the chicken to reduce the fat. Also, used bacos instead of bacon. Now that i'm looking at the recipe again, I realize I forgot to go out on the deck and harvest some tomatoes for the salad. Still good, but next time - tomatoes. - 9/8/09
