Beef Sirloin Stroganoff

2lbs top sirloin, trimmed1 teaspoon kosher salt1 teaspoon ground black pepper2 tablespoons butter or margarine1 tablespoon extra virgin olive oil1 tablespoon all-purpose flour1 cup beef broth1 medium sweet onion, sliced1 clove fresh garlic, finely chopped3 tablespoons light sour cream, room temperature
Cook egg noodles according to package instructions.
Chop beef into thin strips, about 1/2in thick. Sprinkle with salt and pepper.
Over medium heat, melt 1 tablespoon of butter in a saucepan. Blend in flour. Gradually stir in beef broth, simmer until thickened and smooth, stirring frequently.
Heat remaining butter and the olive oil in a saucepan over medium heat. Add beef and onion, cook until browned.
Add meat and onions to beef sauce. Cover, cook on low for about 10 minutes. Stir in sour cream and heat through. Do not boil. Pour over noodles and serve.
