Curried Apple and Carrot Soup

Ingredients
5.6 fl. oz. coconut milk2 cups water1/2 tsp sesame oil1 carrot1/2 medium green apple1/3 chicken breast1 medium clove garlic1 tsp yellow curry powder1 tsp salt1 tsp ground ginger1/4 tsp paprika1 dash black pepper
Directions
1. Peel and grate the carrot finely. Peel and finely mince the apple. Crush the garlic.

2. Put all ingredients in a pot, and simmer until the carrot, apples, and chicken are tender.

    I was excited to make this. Unfortunately it was not very good. It was bland and a bit bitter. I added homemade chicken stock to it and more coconut milk and still couldn't get the right flavor. - 9/25/13

    I am vegetarian, so I replaced the chicken breasts with peas and chopped red & green bell peppers. - 3/16/07
