Vegetable Bread

Ingredients
1 box Carrot Cake mix3/4 cup pumpkin2 zucchini, grated1 cup applesauce1/2 cup skim milk2 eggs1 packet instant oatmeal (apple cinnamon is best)
Directions
In a large mixing bowl, blend the dry cake mix, pumpkin, zucchini, and apple sauce. Add Milk, eggs, and oatmeal packet.

Pour into large bundt pan. (Or muffin pans-- makes 2 dozen).

Bake at 350 F for 35 minutes, or until an inserted knife comes out clean.

(Noted time is for bundt pan. If making muffins, bake at 350 for 18 minutes, or until knife comes out clean).

    Fantastic! So moist and yummy it doesn't taste "healthy" , and it was so easy to make! I made this as described, but didn't have any instant oatmeal so I used 1/2 cup of old fashioned oats and a healthy sprinkling of cinnamon. Baked in a 13" x 9" pan and the time worked out the same. - 5/27/13

    I used the carrot cake mix with shredded carrot and raisins. Very yummy!!! Will cut into serving size pieces and freeze to keep it's freshness. - 3/26/09

    My daughter couldn't get enough of it and she's an extremely picky eater. My son also loved it and he avoids most veggies like the plague. Only thing I found was that I needed to cook it considerably longer that listed here when I made it in muffin tins. - 9/4/07
